As a kid, I hated this salad and was very biased against cabbage. However, now that I am smart and old, I love cabbage in all of its forms. For example, sauerkraut, raw in a salad, in egg rolls, and more. This recipe for an easy and delicious Poppyseed Cabbage Salad is a winner with a variety of meals.

Why this recipe works

Between the tartness of the craisins and the sweetness of the Poppyseed dressing, this salad is just delicious. The trick to make a great Poppyseed Cabbage Salad is to make it ahead of time and let it then rest in the fridge overnight before serving. The dressing helps soften the cabbage so that it is not so crunchy.

Along with the craisins, the saltiness of the sunflower seeds helps to level up this great side dish. Using a whole cabbage helps to make this dish great, as pre-sliced cabbage can wilt, be slimy and sometimes already browned. We had sunflower seeds at home, so I just included the price of how much it would be if you were to use only a portion of a bag.
Below is a 32-oz Cole Slaw bag of pre shredded cabbage and carrots for $3.79. If you do not have the couple of minutes to slice a cabbage head, this is a good option. Just remember that using a whole cabbage can cost half the price and be so much fresher.

Ingredients

1 head of cabbage
Bag of dried cranberries
1 cup sunflower seeds
Poppyseed dressing

Directions

1. On a cutting board, cut the head of cabbage in half and then cut out the root and set aside. You may also need to remove the top few layers of leaves if they are dirty.

2. Cut each half of cabbage in half or thirds as this helps the cabbage to not be super long pieces but more manageable bite-sized pieces.

3. Place the thin cabbage slices into a medium bowl.

4. Open the poppyseed dressing container and then pour it into the bowl with the cabbage and stir well with a spatula. You may not need the entire bottle of dressing, at first, add 1/2 of the bottle, stir, and then see if you need to add more.

5. Open the bag of dried cranberries and then add them to the bowl with the cabbage. Typically this recipe uses carrots, however being allergic to raw carrots prevents me from using them in this recipe.

6. Measure and then add sunflower seeds to the bowl with the cabbage. Matthew helped me stir this Poppyseed Cabbage Salad with a spatula. In our cabinet, we already had a bag of sunflower seeds, so there was no reason to buy more.

7. Using a spatula, stir the Poppyseed Cabbage Salad well.

8. Cover the Poppyseed Cabbage Salad and then place it to rest overnight in the fridge. I used my Wolfgang Puck bowl that has a lid that fits so perfectly. These bowls are great for so many recipes!
