Oh, tis the season… for 102 Gluten Free Cookie Recipes!

Well, you might be reading this post in July, and it will be just as awesome, I promise. But there is something about December that brings out the Cookie Monster in me.

I swear I can pass up cakes and pies and fudge and flan… but when it comes to little, crumbly bites of sugary bliss, I’m dead in the water. I’m goo in the sand. I’m pied to the piper.

It doesn’t matter that they are gluten free. I’m still puddy in the cookies’ hands.

And a quick note before you start pouring through these guys, If a recipie has a blend of what appears to be light flours, I’ll usually just add them all up for volume and use my trusty Bob’s Red Mill Gluten Free All Purpose Baking Flour.

I buy it in bulk from Amazon because the price is better. I’ve included my affiliate link below for easy purchasing right from this post!

No more delaying…

FAQs

Why are my gluten-free cookies so dry? ›

Add extra liquid: Gluten-free flours tend to absorb more liquid than regular flour, so you may need to add more liquid to your recipes to compensate. This can help to keep your baked goods moist and prevent them from becoming dry and crumbly.

How do you make gluten-free cookies not crumbly? ›

Use a Binder. Binders like xanthan gum and guar gum provide structure in gluten-free baking to make up for the missing gluten. This prevents cookies from being too crumbly plus it also helps with freshness.

Does gluten free flour affect cookies? ›

Removing gluten makes cookie dough less springy. So the cookies spread as they bake. And then they spread some more. This is why my gluten-free cookies in the first experiment were so much wider than wheat-based cookies.

Why is my gluten-free cookie dough so sticky? ›

A gluten-free dough that is sticky and too soft can be caused by the following reasons: you may have kneaded the dough too hard or too long, or you may have measured the wrong quantity of liquid.

What is the trick to gluten-free baking? ›

Mix Batters Longer

While conventional wisdom has taught us not to overmix our batters, we've found most gluten-free batters simply need to be stirred for longer. If you're worried this will turn your muffins and cakes rubbery, have no fear. Gluten-free recipes need to have more structure.

What is the secret to moist gluten-free baking? ›

Moisture. There are many ways to increase moisture in a recipe. In general, recipes that call for pureed fruit, sour cream or yogurt are ones you can rely on for a moist product. In case your recipe does not call for these things, using brown sugar instead of white sugar to add moisture.

What is the best flour for gluten-free cookies? ›

Oat Flour. With its creamy, earthy flavor and delicate texture, gluten-free oat flour is a staple of my gluten-free baking recipes. It bakes up soft and smooth, adding necessary starch to many GF baked goods and keeping them moist and tender due to its high fat content and stable protein structure.

Should I refrigerate gluten free cookie dough before baking? ›

5. And refrigerate the dough if it's too sticky. Gluten-free cookie dough is stickier than standard cookie dough, but chilling it can help. This is because cold dough is less sticky, and it doesn't spread as easily, too.

Do gluten-free cookies take longer to bake? ›

Gluten-free goods tend to brown faster and take longer to cook through. So they need to be baked at a slightly lower temperature, for a slightly longer time. Every recipe is different, but in general, try lowering the temperature by 25 degrees and baking the item for 15 minutes longer.

Why are my gluten-free cookies falling apart? ›

Chilling helps the flours and xanthan gum absorb liquid, which makes the dough sturdier and easier to handle. Without a proper rest, your cookies are likely to crumble. Think of mix-ins as the Spanx of the cookie world. They are a sly way to ensure that your cookies look like cookies, not misshapen gluten-free blobs.

How do you thicken gluten-free cookies? ›

Chilling the dough for at least several hours results in cookies that are extra-thick and chonky because it allows the flours to absorb more moisture.

What happens if you don't add flour to cookies? ›

As a bonus, I did a little research to find out just what role each ingredient plays in chocolate chip cookies, so you can adjust your recipe however you feel like experimenting. Flour adds fluff and texture to the cookies. Adding too little flour can cause cookies to be flat, greasy, and crispy.

What holds gluten-free cookies together? ›

As I mentioned, you'll need a 1-to-1 / measure-for-measure gluten-free flour blend to make this gluten free sugar cookie recipe. When you see the term “1-to-1” or “measure-for-measure” it usually indicates that the flour contains a binder such as xanthan gum to keep your baked goods from falling apart.

Why are my gluten-free cookies dry and crumbly? ›

Another reason is that gluten-free flours, such as almond flour or coconut flour, can behave differently than wheat flour in baking. They may absorb more liquid, for example, which can result in dry or crumbly cookies.

Should gluten free cookie dough rest? ›

Instead of proceeding directly to baking, let the gluten-free cookie dough rest for about 30 minutes at room temperature. This resting period is crucial for hydration, not leavening. During this time, gluten-free flours absorb moisture from the wet ingredients, altering the dough's texture and consistency.

How can I improve my gluten-free cookie texture? ›

After adding your dry ingredients, mix the dough for a few minutes (instead of just until combined). This will help the dough develop a bit more structure and get rid of any gritty texture from unincorporated ingredients. After all, you can't develop too much gluten if there's no gluten to begin with.

How do you make gluten-free dough less dry? ›

7- If your cookie dough is too dry and crumbly, just add back to the mixing bowl and stir in a couple tablespoons of your favorite milk or an egg. Add more if needed – the dough needs to hold together, but most cookie doughs shouldn't be sticky.

How do you moisten gluten-free dough? ›

To add extra moisture to your gluten-free bread, incorporate 1 tablespoon of mayonnaise into the recipe. The oil and eggs will help to make the baked bread nice and tender. Olive oil is a healthy cooking oil that adds wonderful flavor to bread. It also adds moisture, creates a tender texture, and extends shelf-life.
