Ingredients

  • 4 cups shirataki rice konjac rice, or cauliflower rice
  • 2 tbsp butter
  • ½ cup white onion diced
  • 1 cup frozen vegetables
  • 2 large eggs
  • 4 tbsp soy sauce or more to taste

Instructions

  • Place a large pan over medium-high heat. Add the butter, cook the diced onion and frozen vegetables until tender for about 5-6 minutes.

  • Crack eggs into the pan and scramble, stirring occasionally.

  • Add the keto rice, and soy sauce. Continue sauteing for 3 minutes, stirring frequently.
